Rice Pudding Recipe

I like to do some kind of traditional pudding every Sunday. It is usually a cake type thing, crumble or pie with custard but this week I fancied a change.

So, I made

It is so easy to make. Our local shop is a Sainsbury’s local and they didn’t have any pudding rice so I went for a risotto rice which works just as well.

You also need milk or cream and as much sugar as you personally like-I used a desert spoon of caster sugar and a knob of butter.

Heat the butter in a large pan and add the sugar and rice.

Similarly to cooking normal rice, pick your measure and stick to it. I used a Peppa Pig mug as it is the smallest mug we have and, with there only being three of us, you don’t need a lot as it is quite filling.

Add one cup of rice to three cups liquid. I used the cream and topped up with milk.

Bring to the boil slowly with the lid on the pan and keep your eye on it.

You don’t need to stand over the pan permanently but at one point, it began to stick so I added a bit more milk.

At this point, you can transfer it into an oven safe dish and bake it but, to be honest, I couldn’t be bothered with another thing to wash so I stuck with the pan on the hob.

Id say t takes about half an hour, depending on how soft you like your rice. Do keep adding milk as and when needed.

I then turned it off and allowed it to cool for a bit in the pan before serving it with blueberries but any fruit would go. I quite like tinned peaches with rice pudding.

So there you go, a traditional desert with little or no effort and brilliant for these colder evenings.
