Fabulous Oat Recipes from White’s

We love oats and eat them every day either as porridge or pancakes.

They are one of the healthiest grains ever and the superfood can help lower cholesterol and boost libido by helping re-blance testosterone and oestrogen in the body.

White’s Oats have very kindly allowed me to share these oata-licious recipes with you.

SEMI-FREDDO LIME, COCONUT AND AVOCADO CHEESECAKES
 
Cool creamy avocado works so well with the rich chocolatey date base
 
Preparation time: 20 minutes
Cooking time: 1-2 minutes
Makes 4
 
Ingredients
75g (3oz) White’s Apple, Cranberry and Raspberry Granola
50g (2oz) White’s Organic Jumbo Oats
50g (2oz) coconut oil
4 Medjool dates, pitted
25g (1oz) unblanched almonds
1 tbsp. raw cacao powder
4 ripe avocados
1 lime – finely grated rind and juice
2-3 tbsp. agave nectar 
100g (31/2oz) cream cheese
Dark chocolate hearts and cocoa powder to decorate
 
Method
1. Line the base of 4 x 10cm (4in) x (3cm /1/4in deep) fluted tart tins with baking parchment.
 
2. Melt the coconut oil in a small saucepan. Pour half the coconut oil into a food processor and add the dates, almonds, oats, and cacao powder and whizz to a coarse paste. Divide between the tart tins and press down evenly with the back of a spoon. Chill until ready to use.
 
3. Halve the avocados and discard the stone. Place the avocado flesh, remaining coconut oil, lime rind and juice, agave nectar and cream cheese into a food processor and whizz to a smooth paste. Divide between the tart tins and level the surface. Freeze for 2 hours until firm enough to turn out onto serving plates. Scatter over the granola. Decorate with dark chocolate hearts. Dust with cocoa powder to serve.
 

APPLE & CINNAMON BUTTERMILK PANCAKES
 
Wow your loved ones or family with a breakfast for champions …these pancakes are great with fresh fruit and agave nectar drizzled over or served warm with fruit and a scoop of ice cream for dessert.
 
Preparation time: 5-10 minutes
Cooking time: 10-12 minutes
Serves 4 
 
Ingredients
75g (3oz) White’s Hazelnut, Almonds & Honey granola
300g (10oz) self-raising flour
1 tsp bicarbonate of soda
½ tsp ground cinnamon 
2 medium eggs
284 ml carton buttermilk
75g (3oz) salted butter, melted
2 large red skinned apples, cored and coarsely grated
½ tsp sunflower oil
 
Method
1. In a large bowl mix together the flour, bicarbonate of soda and cinnamon.  Make a well in the centre and beat in the eggs, buttermilk, melted butter and grated apple.
 
2. Add a little oil to a large non-stick frying pan and swipe clean with a piece of kitchen paper. Heat the pan. Add 3 large spoonful’s of the pancake batter to the pan and allow to spread to about 6cm. Cook for 1-2 minutes until bubbles appear on the top of the pancake. Sprinkle each with a little granola and flip over and cook on the other side for 1-2 minutes. Cover and keep warm while you cook the remaining pancakes – until you have about 12 pancakes. Serve with extra yoghurt, fresh fruit and agave nectar to drizzle.
 
Cook’s tip
The pancake batter is thick – don’t be tempted to add milk to thin it down. The pancakes may need a little help with a spoon to spread to 6cm however they will be light and fluffy on cooking.

NUTTY DATE ENERGY BALLS
 
Indulgent? Tick!…you would never know these little balls of loveliness were actually a healthy chocolate treat to savour.
 
Simple to make and packed full of super tasty ingredients. 
 
Preparation time: 5-10 minutes
Makes: 20
 
Ingredients
100g (31/2oz) White’s Organic Jumbo Oats
150g (5oz) raw whole almonds
175g (6oz) fresh medjool dates, pitted
1 tbsp. crunchy peanut butter
3 tbsp. coconut oil
3 tbsp. cacao powder
2 tsp ground cinnamon
1 tbsp. agave nectar
To decorate: sesame seeds, Goji berries, toasted desiccated coconut, finely chopped pistachio nuts, raw cacao powder
 
Method
1. Place all the ingredients into a food processor and pulse until well combined.  Using wet hands shape into 20 equal sized balls.
 
2. These energy balls can be left plain or rolled in a variety of coatings – try using Oats, sesame seeds, goji berries, mixed seeds, toasted desiccated coconut, finely chopped pistachio nuts, raw cacao powder etc….
 
Cook’s tip
Store in the fridge for up to 1 week but watch out, they won’t last that long!
