Scrummy Thai-style omelette wraps

Now you know what an egg-advocate I am. What other food can be made into a delicious meal or snack in minutes?
Thankfully, on the farm, we have a near endless supply thanks to our happy girls. If you don’t have your own chickens, make sure your eggs carry the British Lion Mark.

My favourite quick recipe is for Thai-style omelette rolls.
You will need:

The key to this recipe is the egg mixture-the star of the show. I hate sticking to recipes so I’ve left a lot of this open so you can use what you like.

For the best omelette to roll, I use either three or four eggs. Break them into a jug, add a splash of milk, seasoning and some ripped coriander. I refuse to chop it.

Then pour the mixture into a hot pan that has about a tablespoon of oil in it-whichever oil you have in.

Then allow the omelette to cook thoroughly on one side before flipping it over, cook the other side and set aside on a plate. Repeat for the amount of people you are feeding-one omelette per adult (children could share).

I have found that it is easier if the omelettes have cooled so technically, you could make these a couple of hours ahead.

If it is a main meal, I sometimes serve Thai-style sticky rice with it so, if you want to, put it on now.

Now, heat the oil again in a wok or, if you’re being lazy, the same pan. Add a pinch of the Chinese 5-spice, a good tablespoon of Thai curry paste and your light and dark soy sauce. I never knew which soy sauce to buy when I am shopping so I always buy and use both to make sure-covering all soy bases.

When it is hot, add your stir-fry veg. I always chop another onion to go in too. If you like things hot, also add a chilli but I don’t tend to if Boo is eating it. Now cook the veg to your taste. I know some people like it hard, others like it more well done. It’s your dinner, you decide.

I am vegetarian but Hubster and Boo are not so I bought some pre-cooked chicken that you can heat in the microwave for theirs.

Heat it up, place it on the pancakes and then spoon the veg on. Think fajitas when you do it. If you over-fill, they will fall apart. Less is more with the veg here-you can always put a bit more on the side of the plate if people want more,

Next, sprinkle some coriander into the open omelette and roll baby, roll.

I get a great satisfaction out of this bit and kids love to get involved and roll their own.
